Shelley is a Natural Foods Chef dedicated to whole foods cooking and green, sustainable living. She received her culinary education from The Nutrition Therapy Institute in Denver, CO where she studied healthful professional cooking and nutrition. Shelley believes in creatively combining whole foods from local and organic resources to create tasty and therapeutic meals that nourish from within, while educating her students to  the benefits of farm to table living. She specializes in ways to provide nutritional support for people with various conditions such as diabetes, allergies, and digestive disorders. She also works with athletes and coaches to create delicious ways to eat healthful while training for special events. Shelley makes organic cooking easy, fun and scrumptious!

This is the land of butter, cream, risotto and veal.  No tomato sauce based dishes or meatballs here. The foods of Milan and Lombardia have more in common with France to which they share a kinship of culture and history.

There is nothing in the world like American Regional Cuisine.  The US is a melting pot of ethnic cultures, and we have embraced these multi-cultural cuisines, infused them with distinct local ingredients, to create our own unique regional cuisine. The next stop on our Food Tour USA is the Mid-Atlantic region.  With its milder climate, river valleys with rich soil, and that amazing coastline, the Mid-Atlantic sets the perfect environment for producing delicious cuisine.

The Mid-Atlantic starts in the north with New York and travels south all the way to West Virginia.  Thrown in there is Maryland, the largest producer of crabs and oysters!! World icons Benjamin Franklin, Plato, Gandhi, and Paul McCartney all have been advocates of the remarkable health benefits of a vegetarian diet. There are various types of vegetarians – over 6 at last count.  It is not which type you are, only that you benefit from the diet.  Additionally, a vegetarian diet does not have to be difficult, boring, or limited.  Most cuisines from around the world include amazing vegetarian dishes.

Our Chefs have created a series of classes which will introduce you to the delicious, easy to create, regional cuisine from countries all over the world that are totally vegetarian.

Campania, Italy,  is rich in culture, especially when it comes to its cuisine.  Naples, it’s capital, is the gateway to Campania.  Here is where the idea of pizza was conceived, as well as it’s pasta (spaghetti being the best known), and the use of tomatoes.

However, today, we will be focusing on creating unique dishes that highlight the bounty harvested from the rich fertile volcanic soil surrounding the Bay of Naples under Mount Vesuvius’ watchful eye.
