Shelley believes in creatively combining whole foods from local and organic resources to create tasty and therapeutic meals that nourish from within, while educating her students to  the benefits of farm to table living. She specializes in ways to provide nutritional support for people with various conditions such as diabetes, allergies, and digestive disorders. She also works with athletes and coaches to create delicious ways to eat healthful while training for special events. Shelley makes organic cooking easy, fun and scrumptious!

World icons Benjamin Franklin, Plato, Gandhi, and Paul McCartney all have been advocates of the remarkable health benefits of a vegetarian diet. There are various types of vegetarians – over 6 at last count.  It is not which type you are, only that you benefit from the diet.  Additionally, a vegetarian diet does not have to be difficult, boring, or limited.  Most cuisines from around the world include amazing vegetarian dishes.

Our Chefs have created a series of classes which will introduce you to the delicious, easy to create, regional cuisine from countries all over the world that are totally vegetarian.

Campania, Italy,  is rich in culture, especially when it comes to its cuisine.  Naples, it’s capital, is the gateway to Campania.  Here is where the idea of pizza was conceived, as well as it’s pasta (spaghetti being the best known), and the use of tomatoes.

However, today, we will be focusing on creating unique dishes that highlight the bounty harvested from the rich fertile volcanic soil surrounding the Bay of Naples under Mount Vesuvius’ watchful eye.
