New Years Resolutions… Ahh. The simple joy of making a list, working hard, and sticking to all of your goals for the new year. Was one of your resolutions to become a batter baker (ha, ha!) in 2012? Well, one of our goals this year is to teach YOU to become a better baker! Shelley is a Natural Foods Chef dedicated to whole foods cooking and green, sustainable living. She received her culinary education from The Nutrition Therapy Institute in Denver, CO where she studied healthful professional cooking and nutrition. Shelley believes in creatively combining whole foods from local and organic resources to create tasty and therapeutic meals that nourish from within, while educating her students to  the benefits of farm to table living. She specializes in ways to provide nutritional support for people with various conditions such as diabetes, allergies, and digestive disorders. She also works with athletes and coaches to create delicious ways to eat healthful while training for special events. Shelley makes organic cooking easy, fun and scrumptious!

Milan is one of the epicenters of the fashion industry, the hub of Italian banking and industry, and also home to some amazing classic Italian dishes. This is the land of butter, cream, risotto and veal.  No tomato sauce based dishes or meatballs here. The foods of Milan and Lombardia have more in common with France to which they share a kinship of culture and history.

Spinach malfatti in gorgonzola sauce – spinach ricotta dumplings with creamy blue cheese sauce

Osso bucco a la Milanese – Veal shank slow braised and served with saffron risotto

Meringhe e crema di cioccolato – Floating islands in milk chocolate cream

Though Lombardia is not known for their wine production, they are conveniently neighbors to two of the best wine regions of Italy: Piedmont and the Veneto.
